It's only the demo, but in the lead up to the release, I thought it'd be a good idea to get together a bit of a game guide covering what we know already. Please add anything you've learned so far and I'll keep updating the OP with details.
Survivors:
The L4D2 Blog post about release dates has some additional into about the survivors and their biographies:
Nick, Ellis, Coach and Rochelle.
Special Infected:
Charger:
The Charger is a large brute reminiscent of the Tank from L4D, except that he has significantly lower health, but greatly increased speed. He thrives in narrow corridors and open spaces where he has a clear line to a survivor. His initial charge does a great deal of damage and knocks the target down, who he then proceeds to pummel until he is killed by another survivor.
The best method to avoid Chargers is to make sure you're always next to some form of barricade or cover. Don't stay in the open for long and if you must dawdle in a corridor, don't do it alone. You'll need all four guns to take down a Charger en route. Luckily, his health isn't super-high, so quick reflexes and concentrated fire will end his run pretty fast.
Jockey:
The Jockey is a small hunched midget reminiscent of Basket Case. His main annoyance is his ability to latch on to the head of his victim and steer him into trouble. In some ways, he works similarly to the Smoker in that by catching someone, he separates them from the group and splits their attention.
Luckily, his presence is usually fairly obvious and he can be quickly taken down in open areas. His main risk may come on maps where there are cliffs and drops where much like the Smoker, he will be able to guide people off edges and into a zombie swarm.
Spitter:
The Spitter looks like some hideously stretched out girl with pigtails. She can spit corrosive slime from a distance and when you kill her, she leaves a pool of the noxious sludge on the ground. She can present risks in confined spaces where you can inadvertently block your path temporarily by killing her in an inconvenient location. If you have the chance, you may want to herd her into the open where avoiding her death pool is easier.
